If it is humid outside your Powder Sugar may start to clump and may be hard to sift. Keep it cool. If you are going to be outside bring a few different types of shakers along just in case they do become difficult to use.
The fryer MUST stay at a constant temperature of around 375 degrees. If this temperature changes to much your funnel cakes will not turn out as pretty as you would like them too!!!
